Since the soil used to be ocean floor, it is rich in clay, sandstone and seashells and oyster fossils, with a high content in minerals and marine scent: all ideal conditions for the training of grapes with the right characteristics to be infested by the Noble Rot. The right succession of moisture and dryness of its climate guarantees that this fungus has only beneficial effects, perforating the grapes’ skin, allowing water in the grape to evaporate and thereby raising the sugar concentration in the remaining juice, producing a particularly fine and concentrated sweet wine.
